What’s an Induction Cooktop?

You may have heard the term before, but do you know what an induction cooktop is? Popular in Europe and Asia and slowly coming to the U.S., induction cooking uses magnets to generate heat in the pan itself rather than a flame. It has several advantages: It is more efficient because more than 90 percent of the heat generated goes toward cooking; it is safer because you can touch the burner when the magnets are on and not be burnt; and it is faster, boiling water in just a few minutes. The downside is you’ll have to use ferrous (containing iron) cookware, though most pots and pans will work. It’s also about 10-15% more expensive.
